It is Mango, Watermelon and Litchi season. Buy boxes and eat more fruit. Always remember, fruit comes first, before

any other meals. Becasue fruit digests much faster and if you eat it after meals it ferments.

(try and use organic products as far as  possible)

Summer Smoothies

Place in a blender:

  • 2 frozen bannanas

  •  1/2 cup of frozen berries or frozen pineapple or paw paw

  • Add enough water and ice to reach +/- 350 ml

Blend till smooth and voila! A perfect place to hide nutrition. One to two tablespoons of ground almonds, multi-vitamin,

protein powders (like hemp powder).

Frozen bannanas blended make the perfect summer ice-cream for kids.

 

Salad Dressings and marinades

Thai Dressing

Place in a blender:

  • 3 to 4 fresh chillis

  •  1 tablespoon of garlic

  • 250 ml of agave syrup

  • 3 tablespoons of apple cider vinegar

  • 2 teaspoons of salt

Blend into paste.

Add 80 ml or 1/3 cup of olive oil or sesame oil, 2 teaspoons of finely minced ginger.

Blend all together and use as a delicious salad dressing ot marinade.

Almondaise Dip or dressing

Place in a blender:

  • 1 cup of ground almonds

  •  Clove of garlic

  • 2 tablespoons of lemon juice

  • Salt to taste

Add a little water at a time and blend. Keep adding water to get to the consistency you desire. Thick for dip

and thin for dressing. You can add your favourite herbs and spices to this blend as welll.


Basic vinegarette

  • 1 part balsamic vinegar

  • 2 parts virgin Olive oil

  • Himalayan Crystal Salt to taste

You can add to this basic dressing a little garlic, a little agave syrup, some chopped herbs or a little mustard.

PASTA

Our pasta is made exclusively in Italy. The grains are ground to fine wheat in slow, grinding stone mills and are processed without any further storage. Then slowly mixed with water in vacuum containers to avoid oxidation. The pasta is dried with great care.
You can tell the different grains by the colour: Green is wholemeal durum wheat, Red is semola (refined durum wheat) and Blue is spelt.

SAUCES

The tomato and vegetable sauces are made of tomatoes and vegetables fully sun-ripened on the vine. No thickening agents or flavour enhancers are used. In this manner valuable nutrients have been preserved. These sauces are truly delicious and can be used in a variety of ways.

Sometimes the simplest is best and just pour the sauce of your choice into your plain pasta. Also dry the Tomato ketchup. You will wonder how something so good for you, can taste so good.

RICE AND GRAINS

The "whole“ grain and the wholegrain products made from this are rich in nutrients and also taste delicious. We offer a wide range of rice specialities from controlled organic farming, including both natural and white rice, as well as quite special products such as the rice mixture with Canadian wild rice.
Since a humid climate is ideal for growing rice, the main rice-growing areas are in Asia. however, in recent decades, a tradition of rice farming has also developed in the USA and in southern Europe, for example in the Po valley in Italy or the French Camargue.

LEGUMES

Peas, lentils and beans belong to the family of legumes (bot. Leguminosae). Since time immemorial they have occupied a central place in Man’s diet.

This is attributable, not least, to their richness in fibre, minerals, trace elements and vitamins. Cooking with legumes means "unbounded creativity". There is hardly any other type of food which is prepared in such varied ways in so many different cultures. Chili con carne or falafel balls - the variety of colours and flavours tempt you to experiment.

SALTS AND SPICES

The salts and spices are unrefined, unbleached and contain no anti-caking agents. Yeast products are made of fresh yeast based on graines of certified organic origin. No emulsifiers or additives are used. The vegetable stock is also made without flavour enhancers.
By the coast, the seawater is traditionally diverted into large basins, so-called salt gardens, where the water evaporates and the salt crystallises out. It is washed several times with seawater, re-dried and sifted. This gentle process largely preserves the valuable minerals such as potassium, magnesium and calcium.

GRAINS AND OATS


Cereals are a very necessary and vital part of all us humans' diet. Muesli is no longer boring, different types contin various kinds of roasted or unroasted flakes like wheat and oats, nuts and dried fruit. There are also varieties especially for children.

For thousands of years, oats have held a wealth of important nutrients such as carbohydrates, protein, vitamins as well as minerals and fibre have made grains one of the most important staple foods.

OILS AND VINEGAR

Rapunzel offers a large selection of controlled organic oils. Their distinctive flavour and full aroma enhance all foods and stimulate the taste buds. You will be surprised at the variety. The oils also have a wide range of fatty acids, rich in vitamins.
Due to being left in their natural state, Rapunzel organic vinegars largely retain all the valuable nutrients such as vinegar bacteria, amino acids, enzymes and B-vitamins. They are neither pasteurised nor sulphurised. We do not use any antioxidants or artificial flavourings. Balsam is not only for the taste buds. The Italian word “balsamico” means “healing” in German.

NUTS AND SEEDS

Nuts and seeds are rich in protein and vitamins and possess a very healthy ratio of polyunsaturated fatty acids to saturated fatty acids. With their rich content of energy-giving carbohydrates and valuable fats, vitamins and minerals, nuts and seeds also provide a healthy energy boost. They are indispensable for use in cakes and pastries, muesli, desserts and both sweet and savoury dishes. They store the greatest amounts of nutrition in the smallest space. With their high content of vital mono- and polyunsaturated fats as well as vitamins, minerals and trace elements, they make an important contribution to healthy nutrition.

DRIED FRUIT

With their rich content of energy-giving carbohydrates, vitamins and minerals, dried fruits provide a healthy energy boost. These energy sources are in some cases present in dried fruits in up to five times the concentration found in the fresh fruit, making them an ideal snack for between meals. However, they are also ideal for use in cakes and pastries, muesli, desserts and both sweet and savoury dishes.
Coconut grated and shavings come from the project Rapunzel initiated in Sri Lanka. They are produced without additives or preservatives. Coconut is rich in potassium, copper, magnesium, iron and vitamin B6. These are delicious in cereals, on their own and in baking.


SPREADS


Whether savoury or sweet, you are sure to find variety for every day in our wide range of vegetarian spreads (nut spreads/nut creams and fresh spreads). The spreads can also be purchased in a sample pack for those who cannot control themselves.

All spreads are produced using ingredients from controlled organic farming without the addition of artificial flavour-enhancers, preservatives or colourings. The fresh and protective production process means that the valuable and healthy nutrients such as vitamins and minerals are largely preserved.

COFFEE AND BEVERAGES

Coffee might have its name from Kaffa in Ethopia, where the coffee plant originated. Rapunzel imports their top quality coffee from third world countries (through the hand-in-hand programme). Careful hand selection ensures that poorly fermented or damaged beans are rejected. This is coffee of the finest order. The coffee goes through rigorous control selection processes before it is slow roasted. Once you have tried this coffee there is no going back, YOU WILL BE HOOKED.

We also have a great selection of other hot beverages from Cocoa to Carob powder drinks and Chocolate drinks. We have delicious totally organic cocoa powder. For use in baking and for a tasty hot drink.

Rapunzel introduced the world‘s first chocolate made of 100% controlled organic ingredientsand now have a wide range of 21 fine varieties. All ingredients originate from controlled organic farming and, where these involve products from so-called developing countries, are all fair trade products!
